The veggies are a dish known as calabacitas- sautéed zucchini, yellow squash and corn. It came out so tender! While I have eaten Carne adovada, I have never made it before. The red stuff is Carne Adovada- pork shoulder marinated in a red chile sauce and then simmered in the slow cooker.
Okay, I am really pleased with how this meal turned out! I could eat it for days! The dinner is a very New Mexican meal!
